When You Don't Have Time: Quick & Easy Vegan Cooked Meal

Today I had a pretty busy day and I wanted to have something nourishing as I've been living on sandwiches in the last couple of days.

So, naturally, I came up with a quick and easy vegan cooked dish and I absolutely love it! It is done in 30 minutes maximum so if you want something new and exotic tasting, definitely give it a try.


  • Brown durum pasta
  • Cooking cream (I prefer the ones made out of rice, sold in 250 grams packs)
  • Garlic and Ginger paste (fresh from the shelves of Tesco, it is their brand)
  • Garam Masala (Indian spice mixture, I also grab this from Tesco usually)
  • Tofu
  • Baby spinach
  • Salt & Pepper (or any other spices according to your liking)
  • Oil (olive or coconut)

I like to start with boiling the water for the pasta. While it is cooking I can prepare the rest of the dish.

Let's start preparing the tofu. I usually grab the smoked one because it already has a good flavor that I can work with. I like to roast this in a pan with a tiny bit of oil. When it is yellowish, brownish I add the baby spinaches. This needs to be cooked, don't forget to stir continuously, until the spinach is a vivid green color.
Between two stirs we can prepare the Indian cream mixture. Just pour half of the cooking cream into a mug (approx. 125 grams) add two tablespoons of the garlic & ginger paste (it is really strong), one tablespoon of garam masala and a little bit of pepper. Blend until it's smooth. Taste it and if you feel like you want more of the above ingredients just simply add more! Remember if the mixture gets too strong you can always add a bit of cooking cream afterwards.

Lastly, add the cream to the tofu and cook it for 10-15 minutes. Voila! The masterpiece is ready!

I'm also thinking about adding mushroom and onion (instead of the tofu), I believe it could make it even better. I will let you know the results ;)
